Picking the best starter for you in this game ultimately comes down to personal preference. You should pick between either utility or visual appearance. That said, I think there are only two monsters with solid designs and those are Fright Bulb and Mud Mannequin. They look the best of the four.
If you prefer stats and moves, I suggest Cruelcumber above all the rest due to its impressive attack power.
If you want more AOE skills early on, go for Mud Mannequin.
If you prefer healing and supportive skills, go for Bright Bulb.
With all of that said though, these are generally pretty weak or just decent monsters, so you may not hold onto them for as long as you would in other similar franchises like Pokemon.
Finally, here is a little tip for you. If play through the demo on the Switch, the only thing that carries over are your monsters; not your save. So, you can play the demo, pick one starter, transfer it to the full game, and then pick another one. This lets you get two of the four starters right from the beginning.
